The secrets of making decaffeinated coffee

Decaffeinated coffee strikes the perfect balance between enjoying a good cup of coffee and keeping caffeine at bay . Through a carefully designed process, coffee beans are transformed to remove their caffeine content while preserving their characteristic flavor and aroma.

How is decaffeinated coffee made?

The coffee decaffeination process can be carried out using different techniques, each with its own philosophy and results.

Through water and osmosis

The method of decaffeinating coffee using water and osmosis is a delicate process that preserves the original flavor of the coffee while removing the caffeine.

The process begins by soaking the coffee beans in hot water to dissolve the caffeine. Then, a reverse osmosis filter is used to separate the caffeine from the water , leaving behind the oils and flavor compounds.

This water, now saturated with the flavors of the coffee but free of caffeine, is used to treat new beans, ensuring that the flavors remain in the coffee while the caffeine is extracted.

This process is repeated until the beans reach the desired level of decaffeination.

This method is appreciated for its ability to keep the sensory qualities of the coffee intact.

Through carbon dioxide

The carbon dioxide (CO2) decaffeination method uses this gas in a supercritical state, where it has properties of both liquid and gas, to extract caffeine from coffee beans without significantly altering their essential oils and flavor compounds.

In this process, the coffee beans are exposed to supercritical CO2 under high pressure, allowing the CO2 to penetrate the beans and dissolve the caffeine .

Then, the CO2 is separated from the beans and recycled, and the caffeine is extracted from the CO2.

This method is effective in maintaining the quality and flavor profile of the coffee , making it a preferred option due to its efficiency and lower environmental impact.

Using chemical solvents

The decaffeination method using chemical solvents involves the use of solvents such as ethyl acetate or methylene chloride to extract caffeine from coffee beans.

The beans are soaked or steamed with the solvent, which binds specifically to the caffeine, allowing its removal.

Then, the grains are meticulously washed to remove any solvent residue.

This method is efficient at extracting caffeine and can maintain the flavor and aroma of the coffee, although the use of chemicals raises debates about safety and environmental impact .

Is the coffee 100% decaffeinated?

Decaffeinated coffee is not 100% caffeine-free, although the caffeine content is significantly reduced. Standards may vary, but generally, for coffee to be considered decaffeinated, it must have at least 97% of its caffeine removed .

In practice, a cup of decaffeinated coffee can still contain a small amount of caffeine, ranging from 1 to 5 milligrams per cup, compared to 95 milligrams or more in a cup of regular coffee . This reduced level allows many to enjoy the taste of coffee without the full stimulating effects of caffeine.

COALCAFÉ, SL has received aid from the European Union under the NextGenerationEU Fund, within the framework of the Recovery, Transformation and Resilience Plan, for the installation of a 27kWp photovoltaic system for self-consumption in the TOSTADERO within the incentive program linked to self-consumption and storage, with renewable energy sources, as well as the implementation of renewable thermal systems in the residential sector of the Ministry for Ecological Transition and the Demographic Challenge, managed by IVACE, through the Ministry of Sustainable Economy, Productive Sectors, Commerce and Labor.

COALCAFÉ, SL has received €171,835 in funding under the Common Agricultural Policy Strategic Plan (PEPAC) 2023-2027, co-financed by the European Union through the European Agricultural Fund for Rural Development (EAFRD), the Spanish Ministry of Agriculture, Fisheries and Food, and the Valencian Regional Government. Thanks to this funding, the company has implemented two key initiatives for its technological transformation: an automated packaging and palletizing line, and a new automated coffee roasting system designed to improve process control, final product quality, and energy efficiency. These investments are part of COALCAFÉ's modernization strategy and directly contribute to improving competitiveness, sustainability, and innovation in the agri-food sector.
